Hi Duncan,
The surviving Admission and Discharge Registers for Holbourn Union are kept
at the London Metropolitan Archives, which is near the Family Records Centre
in Islington.
There are several registers for the three Holborn workhouses covering that
time but I don't know if they include infirmary admissions. My catalogue
does not mention a separate infrimary admissions book. Quite often people
went to the workhouse first and were transferred to the infirmary so it may
be necessary to look at the admission books for all of the workhouses (there
were 3 open in 1881) to find him.
Good luck
