Philip, I saw your message earlier and I've also wondered for some time about this Thornley family and the GRUNDY name change, but I had no other information to add.
LAN-OPC has now transcribed the 1875 marriage at Deane St Mary of Betty THORNLEY's daughter Martha b.1853 to Moses WHARMBY. Interestingly, the groom's father is listed but the bride's father is not. I don't think this proves anything one way or the other but it might be another clue, so I'm passing it on in case you aren't aware of it.
