Until recently the remarriage of divorced people in the Church of
Ireland was not possible (I don't know if it is yet). Either family lore
is wrong, or indeed it is right and the guy disappeared and after 7
years she was able to get him pronounced dead.

If you know where she was married her status would be given and should
answer your question.
