after 6 months you can drink it or bottle it.

NO not after the first6 months
do you cork it?
put some in a decanter and bottle the rest and seal with parrifin.

The Key word here is shake occasionally. Like when you think about it
every month or so. AS to getting tired it depends on how much you want
the Cherry Herring. Incidently the burbon picks up the cherry flavor and
the cherries tase like burbon.
