In case there is a chance of a connection re Henry/Henri Mitchell - the 1851/52 Canada Census for
Huntingdon (county) / 148 St. Valentin parish / p. 59d, 60a, (119) shows an 'Henri Mitchell", age 20, Protestant, unmarried ..... perhaps something worth a follow-up?

It seems to me that Henry and Louise may have been married in a protestant church and then Henry converted and they were married in the Catholic Church. You may never know the specific situation. Witnesses for the baptism and the marriage were the same.
