Hi Bev,

the 1871 is at www.worldvitalrecords.com I don't have a subscription,
but I think you search there for free. If you find something, maybe
someone here has a sub. and can look at it for you.

the 1881 is at
http://www.collectionscanada.gc.ca/databases/census-1881/001049-100.01-e.php

I don't think the 1861 is on line anywhere yet.
