If they were both of "Age of Majority" they would be born 1808 of before. I
think you are mixing it with "age of minority"(Under age).
It can easily be that Louis & Marie-Francoise are the parents. I couldn't
find a marriage with a Judith Guilbert.
Maybe the priest wrote the name of the bride for the mother name.(not the
first time that it happened:)
Women married very young and could easily have children for 25 years of more
during their married life.

I have come upon a Louis BOUVIER married to a Judith GUILBERT. Their son,
Louis BOUVIER, married Marie-Esther ARPIN on 21 Jan 1830 at La Presentation.
Both marriage parties were listed as being of majority so they would be born
no later than about 1808.
This is very strange as I already have a Louis BOUVIER maried to
Marie-Françoise GUILBERT dit LAFRAMBOISE on 07 Aug 1786 at
St-Charles-sur-Richelieu, but do not have a son named Louis for them and
think I pretty much have her child-bearing years taken care of. :)
