5j would mean 5 jours or in English 5 days which is probably the reason for the 3 digit notation - 005.
Sts is simply the plural of St, the abbreviation of Saint. The name of the Church you mention combines the names of two Saints, Gervais and Protais. In Boston we have a Church named Saints Peter and Paul.

In PRDH on the death of Joachim Mercier it said age "005" just what is
005 and when was he born. That wasn't listed. He is the son of Joachim
and Suzanne Billodo.
On the son Francois it said age at death "05j". HE was baptised 13 Oct
1789 and died 16th.
