Hi Folks,
In addition to what Kathy recommended you can check a local university library to see if they have the printed New Jersey Archives which includes a host of information but also wills from about the beginning to 1800. The printed New Jersey Archives includes newspaper accounts, wills, deeds and court records. Its a series of about 15 books and very useful, especially for people who can't get to N.J. Since many university libraries have on-line cataloges you can check university libraries from home to see who has the printed N.J. Its also known as the Colonial Documents of New Jersey.

You can view materials on fiche at the County Surrogates Office--The charge
through to copy is $3.00 per page! The NJ State Archives has the old
original files.
The NJ State Archives has wills and probate files up through 1952 for the
entire state. These are indexed and they will make copies for $5.00 per packet
(up to 10 pages).
You can visit the Archives and copy these yourself for 50 cents/page. They
have the originals and microfilmed copies.
