Different counties do thinks differently. I know in Bergen it is on microfilm. You can look at the microfilm, then they copy it at a large charge. It is possible this has changed as I haven't done it since they moved to the new building. I do know when I order a copy of a will for work, they charge $3 a page (actually I think it has gone up--my paralegal deals with such details).
I have done a lot of work with probate records outside of New Jersey. In Otsego County, NY (Cooperstown) and Schuylkill County, Penn (coal country) I was able to use the old books themselves. Usually I can copy them myself, but occasionally have to let them do it. It usually is more expensive per page if they do it for you.
Not very helpful I know, but it is my experience. I much prefer the old books to microfilm.
