Hello,
This is a cookie served at many festivals, marriages and celebrations. It was in
our hand compiled family cookbook under the Wandi (wandy), which is the Americanized
Italian word "Guanti". It goes by a variety of different names in various regions
of Italy (Cenci for example).
Took me a while to find the correct Italian name, as there is no "W" in Italian.
The cookies do look like hands wearing white gloves, clasped together. Also known
as "Love Knots".
========
Wandi (Italian: guanti or "gloves")
(This recipe has been in our family for over 100 years. It comes from north of
Naples in Italy, the Villa Santa Lucia area.)
Yield: 1 Batch
10 c Flour 1/4 c Oil
12 ea Medium eggs 1 ts Salt
1 tb Sugar x Confectionery sugar
1 tb Baking powder
1/4 c Shortening (Crisco)
Melt shortening and add oil, let cool. Beat eggs, add sugar, salt then add cooled
shortening. In a separate bowl mix baking powder and flour, then work the flour
into the egg mixture. Divide the dough into 4 parts. Roll dough on slightly
floured board and keep turning to make a round of dough about 1/8" thick. Cut into
strips. Tie strips into a simple knot and drop into deep hot oil to fry until
golden yellow. Drain, let cool, and sprinkle with confectionery sugar. If you have
trouble rolling dough to 1/8", roll a little thicker, cut strips and then roll
individual strips to 1/8". Molto bene!
