In the 1841 Census there are a John and Ann Gunfield living in Thorrington, born respectively 1799 and 1800 in Essex. These seem possible candidates for George's parents. It might be worth checking the Thorrington baptism registers if you haven't done so already.
Have you got George and Martha's marriage register entry/marriage certificate? Does it give any clues as to where he was living at the time of the marriage? What about the witnesses - could they be his parents/brothers/sisters/other relatives?
It looks suspiciously as if the Gunfields/Ganfields might have come originally from Somerset as most of the other 1841and 1851 Census entries are from there. One possibility might be to check if there was a large landowner in Tendring in the 1750/1850 period that also owned land in Somerset.
