They are, in fact, still in Essex (i.e., the boundary hasn't moved).

Postal addresses and county boundaries don't always match - a lot of the
villages around Stansted Airport have Bishops Stortford postal addresses
but are in fact in Essex. This kind of postcode/county mismatch is
common all over the country - there are several villages near me that
are in Suffolk but have postal addresses in Essex because their post
town is in Essex.
