Noted this for the enumerator on the 1841 census for Brightlingsea Essex:

"State the number of persons known to have emigrated from the district to the Colonies or to Foreign Countries since December 31 1840"-
Notation on the page says-"Mariners and their wives at Jersey for the Oyster season"

So if your mariner ancestor is missing from the 1841 census it might be a good idea to check the Jersey census.
