If the ERO does not know of earlier ones, they are most unlikely to exist as
all such records are now sent to the ERO for safe keeping, apart from recent
ones which may still be in use. As far as I know the church is still there,
as most parish churches are in this area. It's quite common for parish
records not to go right back to the earliest 16th century dates and in any
case they are often incomplete and unreliable in earlier times. It's
frustrating - I have the same problem myself but with Yorkshire records of
my ancestors. Pre-1676 you could look at wills which have been very well
catalogued in Essex and are now mostly on fiche and indexed. For a quick
look up, if you have precise names and dates, you could try emailing the
Saffron Walden office of the ERO:
