I was intrigued by the question so headed for my dictionaries but couldn't
find a word for bartender (or barman / barmaid as they are called in New
Zealand)

But

skænke = to pour
skænkestue = public bar(room) in an hotel

So how about skænkemand / skænkepige or skænkestuemand / skænkestuepige
